Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda

  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 tablespoon red food coloring
  • 2 large eggs

  • 1 cup cream cheese softened
  • 4 cups powdered sugar

Instructions

  • Preheat the oven to 350°F (175°C).
  • Line a cupcake tin with paper liners.
  • In a large bowl, mix the oil and sugar.

  • In another bowl, sift together the flour, cocoa powder, baking soda, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture.

  • Fill each cupcake liner about 2/3 full with batter.
  • Bake for 20-22 minutes, or until a toothpick comes out clean.
  • Allow cupcakes to cool in the pan for 5 minutes, then transfer to a wire rack.
  • Prepare the cream cheese frosting by beating cream cheese, powdered sugar, and vanilla until smooth.
  • Frost the cooled cupcakes generously.
