Preheat your oven to 375°F (190°C).
In a large skillet, sauté the diced onion and garlic over medium heat until softened.
Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned.
Stir in the smoked paprika, cumin, diced bell peppers, and corn. Cook for a few more minutes until well combined.
Fold in the diced sweet potatoes and season with salt and pepper.
Transfer the mixture to a greased baking dish, spreading it out evenly.
If desired, sprinkle the shredded cheese on top before baking.
Bake for 25-30 minutes, or until the sweet potatoes are tender and the top is golden.
Remove from the oven and let sit for a few minutes before serving.
