Ingredients

  • 2 boneless skinless chicken breasts (about 1 lb)
  • 8 oz egg noodles
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme
  • Salt and pepper to taste
  • 1/4 cup fresh parsley chopped (for garnish)

Instructions

  • Marinate the chicken breasts with olive oil, garlic, thyme, salt, and pepper.
  • Cook the egg noodles according to package instructions until al dente.
  • In a large skillet, heat a tablespoon of olive oil over medium-high heat.
  • Add the marinated chicken to the skillet and cook for about 6-7 minutes on each side, or until fully cooked.
  • Remove the chicken from the skillet and let it rest while you prepare the noodles.
  • In the same skillet, melt 3 tablespoons of butter and add the drained noodles, tossing to coat.
  • Slice the chicken and serve it atop the buttered noodles, garnishing with fresh parsley.
