Satisfying Cheesy Zucchini Chickpea Bake Recipe

This Cheesy Zucchini Chickpea Bake combines creamy cheese and hearty chickpeas for a comforting dish, ideal for family gatherings or cozy weeknight dinners.

Ingredients

  • 2 medium zucchinis sliced
  • 1 can 15 oz chickpeas, drained and rinsed
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 2 cloves garlic minced
  • 1 small onion diced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a skillet, heat olive oil over medium heat. Add garlic and onion; sauté until the onion is translucent.
  • Add sliced zucchini and sauté for about 5 minutes until they are slightly tender.
  • Stir in the chickpeas, oregano, salt, and pepper. Cook for an additional 2–3 minutes.
  • Remove the skillet from heat, and stir in half of the mozzarella and Parmesan cheeses until well combined.
  • Transfer the mixture to a greased baking dish, spreading it evenly.
  • Top the mixture with breadcrumbs and remaining mozzarella and Parmesan toppings.
  • Bake in the preheated oven for 25–30 minutes, or until the top is golden and bubbly.
  • Remove from the oven and let it cool for a few minutes before serving.
