Ingredients

  • 2 pounds of waxy potatoes like Yukon Gold
  • 3 tablespoons of olive oil
  • Sea salt to taste
  • Freshly ground black pepper to taste
  • Fresh herbs like rosemary or thyme, optional

Instructions

  • Preheat your oven to 425°F (220°C).
  • Wash and peel the potatoes, then chop them into even-sized pieces.
  • Place the chopped potatoes in a pot of cold salted water and bring to a boil.
  • Simmer for about 10 minutes until they are just tender but not falling apart.
  • Drain the potatoes and let them dry for a few minutes to remove excess moisture.
  • Toss the potatoes in a bowl with olive oil, salt, and pepper.
  • Spread the potatoes in a single layer on a baking sheet.
