Ingredients

  • 4 chicken thighs bone-in and skin-on
  • 1 cup long-grain rice
  • 1 medium onion diced
  • 3 garlic cloves minced
  • 1 bell pepper chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 2 cups chicken broth
  • 1 cup cherry tomatoes halved
  • 1/2 cup Kalamata olives pitted and halved
  • Fresh parsley chopped, for garnish
  • Salt and pepper to taste

Instructions

  • Season the chicken thighs
  • Sear the chicken in the pan
  • Remove chicken and sauté vegetables
  • Add spices and rice
  • Pour in the chicken broth
  • Add the chicken and remaining ingredients
  • Simmer and cover
