Ingredients

  • 1 lb boneless skinless chicken breasts
  • 2 cups marinara sauce
  • 2 cups fresh mozzarella cheese shredded
  • 1 cup grated Parmesan cheese
  • 1 cup fresh basil leaves chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium-high heat. Add sliced chicken breasts, garlic powder, onion powder, salt, and pepper. Cook for about 7-8 minutes until lightly browned.
  • Spread 1 cup of marinara sauce at the bottom of a baking dish. Layer half of the chicken over the sauce, followed by half of the mozzarella and Parmesan.
  • Add another layer of marinara, followed by the remaining chicken, and top with the remaining cheeses and basil.
  • Cover the dish with foil and bake for 20 minutes, then remove the foil and bake for an additional 10-15 minutes until the cheese is golden and bubbly.
  • Let the bake cool for a few minutes before slicing. Serve warm, garnished with extra basil if desired.

Notes

For best results, freshly shred your cheeses. Leftovers make a fantastic lunch, simply reheat in the oven for a few minutes.
