Irresistibly Flavorful Jalapeno Corn Nuggets

Crispy on the outside and tender within, Jalapeno Corn Nuggets deliver a delightful burst of flavor, making them an ideal snack or appetizer for any gathering.

Ingredients

  • 1 cup corn kernels fresh, frozen, or canned
  • 1/2 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1 medium jalapeno finely chopped
  • 1/4 cup green onions chopped
  • 1/2 teaspoon baking powder
  • 1 large egg beaten
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  • In a mixing bowl, combine the corn kernels, flour, cornmeal, jalapeno, and green onions.
  • In a separate bowl, whisk together the egg, baking powder, salt, and pepper.
  • Pour the egg mixture into the corn mixture and stir until just combined.
  • Heat about 1 inch of vegetable oil in a skillet over medium heat.
  • Drop spoonfuls of the batter into the hot oil, making sure not to overcrowd the skillet.
  • Fry for 2-3 minutes on each side or until golden brown.
  • Remove fried nuggets from the oil and place them on paper towels to drain any excess oil.
  • Serve warm with your favorite dipping sauce.
