Preheat your oven to 350°F (175°C).
In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Scoop tablespoon-sized portions of dough and place them on a baking sheet lined with parchment paper.
Make a small indentation in the center of each dough ball and fill it with a spoonful of your chosen filling.
Top each filled dough ball with more dough to cover the filling, sealing the edges.
Bake for 12-15 minutes or until golden brown on the edges.
Allow to cool on the baking sheet for a few minutes before transferring them to wire racks.
