  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour

  • 1/2 teaspoon salt
  • 1 cup fruit preserves or filling of choice

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Scoop tablespoon-sized portions of dough and place them on a baking sheet lined with parchment paper.
  • Make a small indentation in the center of each dough ball and fill it with a spoonful of your chosen filling.
  • Top each filled dough ball with more dough to cover the filling, sealing the edges.
  • Bake for 12-15 minutes or until golden brown on the edges.
