Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a mixing bowl, combine chicken, cream cheese, sour cream, green onions, garlic powder, onion powder, salt, and pepper until smooth and well blended.
Unroll crescent roll dough and separate into triangles. Place 2 tablespoons of chicken mixture in the center of each triangle. Fold corners over filling and pinch to seal, forming a pillow shape.
Dip each pillow into melted butter, then coat with breadcrumbs. Arrange on the prepared baking sheet.
Bake for 20–25 minutes, until golden brown.
Meanwhile, prepare the sauce: In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute. Slowly whisk in milk and cook until thickened, 3–4 minutes.
Remove from heat and stir in Parmesan cheese and Italian seasoning. Season with salt and pepper.
Serve warm chicken pillows drizzled with creamy Parmesan sauce. Garnish with parsley.
