- 1 can 15 oz chickpeas, drained and rinsed
- 1 can 15 oz black beans, drained and rinsed
- 1 cup cherry tomatoes halved
- 1 cucumber diced
- 1 bell pepper red or yellow, diced
- 1/4 red onion finely chopped
- 1/4 cup fresh parsley chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Prepare the beans and vegetables.
Combine the prepared ingredients in a large bowl.
