Layers of tender eggs and rich flavors come together in Baked Eggs Napoleon, making it an inviting dish for brunch gatherings or cozy family breakfasts.

Ingredients

  • 4 large eggs
  • 2 flaky puff pastry sheets
  • 1 cup fresh spinach chopped
  • 1 cup whole milk
  • ½ cup shredded cheese Gruyere or similar
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 375°F (190°C).
  • Roll out the puff pastry and cut into squares.
  • Place the pastry squares in a greased muffin tin.
  • Sauté the spinach until wilted, then set aside.
  • In a bowl, whisk together the eggs, milk, mustard, salt, and pepper.
  • Evenly distribute the wilted spinach into each pastry shell.
  • Pour the egg mixture over the spinach in the pastry shells.
  • Top with shredded cheese before baking.
  • Bake in the preheated oven for 20-25 minutes until the egg is set and the pastry is golden brown.
  • Remove from the oven and allow to cool for a few minutes before serving.
