Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup powdered sugar
  • ½ cup unsalted butter softened
  • 1 ½ cups fresh or frozen cranberries
  • 3 large eggs
  • 1 cup granulated sugar
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • Powdered sugar for dusting

Instructions

  • Preheat the oven to 350°F (175°C).
  • Prepare the crust by mixing flour and powdered sugar in a bowl.
  • Cut in the softened butter until the mixture resembles coarse crumbs.
  • Press the mixture firmly into the bottom of a greased 9x9-inch baking pan.
  • Bake the crust for 18-20 minutes until lightly golden.
  • While the crust bakes, prepare the cranberry filling by blending cranberries until smooth.
  • In a medium bowl, whisk together eggs, granulated sugar, lemon juice, and vanilla extract until well combined.
  • Stir in the blended cranberries until fully incorporated.
  • Pour the cranberry filling over the baked crust and return to the oven.
  • Bake for an additional 25-30 minutes or until the center is set.
  • Cool completely before dusting with powdered sugar and slicing into squares.
