  • 3 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 2 teaspoons balsamic vinegar
  • Fresh herbs such as parsley or basil, for garnish

Instructions

  • Prepare the eggplants by slicing them into rounds or lengthwise strips.
  • Sprinkle the slices with salt and let them sit for about 30 minutes.
  • Rinse off the salt and pat the eggplants dry with a towel.
  • Brush the eggplant slices generously with olive oil, and season with pepper.
  • Preheat your grill to medium heat, around 400°F (200°C).
  • Place the eggplant slices on the grill and cook for 4-5 minutes per side.
  • Drizzle with balsamic vinegar and garnish with fresh herbs before serving.
