- 2 medium eggplants
- 3 tablespoons olive oil
- 1 teaspoon sea salt
- 1 teaspoon black pepper
- 2 teaspoons balsamic vinegar

Prepare the eggplants by slicing them into rounds or lengthwise strips.
Sprinkle the slices with salt and let them sit for about 30 minutes.
