Preheat the oven to 350°F (175°C).
In a large bowl, whisk together the dry ingredients: flour, baking soda, salt, cinnamon, and nutmeg.
In another bowl, combine the wet ingredients: maple syrup, applesauce, vegetable oil, and vanilla extract.
Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
Fold in the diced apples gently.
Pour the batter into a greased loaf pan and smooth the top.
Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack.
