Grease a baking dish (9x13 inches).
Cut the bread into cubes and place them in the baking dish.
In a bowl, whisk together the eggs, milk, sugar, vanilla, cinnamon, and salt.
Pour the custard mixture over the bread cubes, making sure every piece is well-coated.
Cover the dish with foil and refrigerate for at least 2 hours, or overnight.
Preheat your oven to 350°F (175°C).
Bake the covered dish for 30 minutes, then remove the foil and bake for an additional 15 minutes.
Let it cool for a few minutes before serving, topped with maple syrup or fresh fruit.
