Preheat your oven to 375°F (190°C).
In a large skillet over medium heat, cook the Italian sausage until browned, about 5–7 minutes.
Add the sliced onions and bell peppers to the pan. Sauté until the vegetables soften, about 3–5 minutes.
Stir in the pepperoni and salami, mixing everything in the pan for an additional 2 minutes.
Pour in the marinara sauce, stirring to combine. Simmer for 2–3 minutes.
Remove the skillet from heat and sprinkle the mixture with Italian seasoning, salt, and pepper.
Slice the hoagie rolls down the center, without cutting all the way through.
Stuff each roll with the sausage and vegetable mixture, then top with provolone cheese.
Place the stuffed rolls on a baking sheet, then bake for 15–20 minutes or until the cheese is melted and bubbly.
Remove from the oven and let cool slightly before serving.
