In a separate bowl, whisk together the rolled oats, flour, baking soda, cinnamon, and salt.
Gradually add the dry mixture to your wet mixture, stirring until just combined.
Fold in the diced apples and caramel bits until evenly distributed.
Drop tablespoons of dough onto a lined baking sheet, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until the edges are slightly golden.
Remove cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack.
