Ingredients

  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup diced apples peeled
  • 1/2 cup caramel bits or chopped caramel candy

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Add in the egg and vanilla extract, mixing until well combined.
  • In a separate bowl, whisk together the rolled oats, flour, baking soda, cinnamon, and salt.
  • Gradually add the dry mixture to your wet mixture, stirring until just combined.
  • Fold in the diced apples and caramel bits until evenly distributed.
  • Drop tablespoons of dough onto a lined baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are slightly golden.
  • Remove cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack.
