Ingredients

  • 4 large portobello mushrooms
  • 1 cup cherry tomatoes halved
  • 1 cup fresh mozzarella cheese diced
  • 1/4 cup fresh basil leaves chopped
  • 4 tablespoons unsalted butter melted
  • 4 cloves garlic minced
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 375°F (190°C).
  • Clean the portobello mushrooms and remove the stems.
  • In a small bowl, mix melted butter and minced garlic.
  • Brush the portobello caps with the garlic butter mixture.
  • In a mixing bowl, combine cherry tomatoes, mozzarella, and basil. Season with salt and pepper.
  • Spoon the tomato and cheese mixture into each portobello cap.
  • Place the stuffed mushrooms on a baking sheet and bake for 20-25 minutes.
  • Remove from the oven and let rest for a few minutes before serving.
