- 2 cups cooked risotto
- 1 cup mozzarella cheese cubed
- 1/2 cup all-purpose flour
- 2 large eggs beaten
- 1 cup breadcrumbs
- Vegetable oil for frying
- Salt and pepper to taste
Prepare the risotto and cool it completely.
Form the arancini by taking a portion of risotto and placing a piece of mozzarella in the center.
Prepare your breading station with flour, beaten eggs, and breadcrumbs.
Heat the oil in a deep pan until it reaches 350°F (175°C).
