Ingredients

  • 1 pound boneless skinless chicken breasts
  • 1 head of garlic roasted
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley chopped (optional)

Instructions

  • Preheat your oven to 400°F (200°C).
  • Prepare the garlic by cutting the top off the head, drizzling with olive oil, and wrapping it in foil. Roast for 30-35 minutes until soft and caramelized.
  • While the garlic roasts, season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat and sear the chicken for 5-7 minutes per side until golden brown and cooked through.
  • Remove the chicken from the skillet and let it rest. In the same pan, add the wilted spinach and cook for 2 minutes, then squeeze in the roasted garlic and stir.
  • Pour in the heavy cream, stirring thoroughly to combine, and bring it to a simmer. Gradually stir in the Parmesan cheese, allowing it to melt into the sauce.
  • Slice the rested chicken and return it to the skillet, spooning the sauce over the top. Let everything simmer together for an additional 5 minutes.
  • Garnish with chopped parsley, if desired, and serve warm. Enjoy this dish with a spoon, savoring every creamy bite!

Notes

To store leftovers, place them in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm on the stovetop over low heat, adding a splash of cream if needed.
