Creamy Cajun Chicken & Rice in One Pot

This Creamy Cajun Chicken & Rice combines bold spices with rich textures, making it an ideal dish for cozy dinners or festive gatherings.

Ingredients

  • 1 lb chicken thighs boneless and skinless
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 bell pepper diced (red or green)
  • 1 cup long-grain rice
  • 3 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 2 green onions chopped (for garnish)

Instructions

  • Season the chicken thighs with Cajun seasoning.
  • Heat olive oil in a large pot over medium-high heat.
  • Add the seasoned chicken thighs to the pot and brown on both sides.
  • Remove the chicken from the pot and set aside.
  • In the same pot, add onion, garlic, and bell pepper, sautéing until softened.
  • Stir in the rice, ensuring it's coated with the aromatic mix.
  • Pour in the chicken broth and return the chicken to the pot.
  • Bring to a boil, then reduce heat and simmer covered for 20 minutes.
  • After 20 minutes, stir in the heavy cream and adjust seasoning.
  • Garnish with chopped green onions before serving.
