Ingredients

  • 8 oz. pasta penne or fusilli
  • 2 boneless skinless chicken breasts (about 1 lb.)
  • 2 cups cherry tomatoes halved
  • 1/4 cup balsamic glaze
  • 1/4 cup fresh basil chopped
  • 1/2 cup fresh mozzarella balls halved
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • Salt and pepper to taste

Instructions

  • Cook the pasta according to package instructions until al dente, then drain and set aside.
  • In a large skillet, heat olive oil over medium-high heat. Season chicken breasts with salt and pepper, then add to the skillet.
  • Remove the chicken from the skillet and let it rest for a few minutes before slicing.
  • In the same skillet, add garlic and sauté for 1 minute, then add cherry tomatoes, cooking until they soften (about 5 minutes).
  • Stir in cooked pasta, balsamic glaze, basil, and fresh mozzarella until well combined, then add sliced chicken on top.
  • Serve warm, garnished with additional basil if desired, and enjoy!
